Charred Broccoli Almond Lentil Salad

For the most part, I try to eat pretty clean. But some days, you may indulge in more glasses of rose and pieces of chocolate cake than you feel comfortable admitting. And when I say you, I mean me. I am the cake eating guilty one here. But alas, it is all about moderation. Am I right? So that brings us to this little beauty of health.
Healthy food does not, I repeat NOT, need to be boring. This charred broccoli almond lentil salad has so many interesting flavors and textures, it will keep you guessing with mystery what you may experience next. The lemon tahini dressing is creamy and bright, that paired with the crunch of the almond and charred broccoli, it will have you over the moon! But what is the deal with Lentils?
Lentils are to the food world, what Windex is to the cleaning world. Not following? Okay. They are always applicable. They have everything. They are just amazing. Lentils, referred to by some as a powerhouse of nutrition. Don’t act like your not impressed. They are high in dietary fiber, 16 grams per serving to be exact. Per cup, lentils contain 18 grams of protein! Which is crazy, because it is a non-animal source meaning, you are not ingesting all the fat and cholesterol that comes along with meat protein sources. This in turn, prevents a lot of terminal disease in the body. Although not a complete protein, just add a grain with it and you are good to go! Some other impressive nutrients of lentils are Folate, Iron, Calcium, and Potassium, making lentils basically a healthy necessity to anyone!

Charred Broccoli Almond Lentil Salad
Ingredients
- 3 cup, Broccoli, sliced 1/2 vertically
- 2 Garlic Cloves, minced
- 1/4 cup, Slivered Almonds
- 3 cup, Veggie/Chicken Stock
- 1 Bay Leaf
- 2 tbsp Olive Oil
- Salt and Pepper
- Optional: Red Chili Flakes
- Lemon Tahini Dressing
- 1 Garlic Clove
- 2 Lemons, Juiced and Zested
- 2 tbsp Tahini
- 2 tbsp Extra Virgin Olive Oil
- 1/2 cup of warm water
- Salt and Pepper
Instructions
Turn oven on to Broil
Rinse your lentils, as they may have dirt/debris
In medium pot ,add stock, lentils, and bay leaf and bring to a boil
Cover with lid and reduce heat, simmer until ready
Usually lentils take about 15-20 Minutes
Once they are ready you may now season them with salt, if you do this beforehand it does mess with the cooking process
Remove bay leaf
In a medium mixing bowl, mix broccoli, olive oil, garlic, salt, pepper, and almonds
Pour contents onto a baking sheet, be sure that the flat side is down for the broccoli- this will give you the desired "Charred Look"
Broil for about 5-7 minutes, untill everything has a nice color. Broiling happens pretty fast, so be careful not to forget about it!
To make the Lemon Tahini Dressing:
Add all ingredients, except the half of the water to a food processor or blender, blend until fully mixed
You may have to adjust with more water depending on how you would like the consistency.
To Assemble:
Top cooked lentils with the garlicky broccoli and almonds
Drizzle lemon tahini dressing on top
and if desired top with a few red chili flakes
