Greek Nachos, because just look at em!
Nachos are one of my all time, favorite things. Back when I was serving, it was a perfect end of shift tradition. We would sit down, order the finest $4.00 happy hour rose, and the biggest platter of “Nachitos” (this is what we called them). All of this, while discussing the crazy customers we had come across during our shift. Would I ever go back to serving? Probably not. But, the gold mine of stories that came from it absolutely made it worth my time. Anyways, making these Greek nachos made me think of all those times nachitos got me through another shift.
You may be thinking, Greek Nachos sound weird. Well, I am super happy to tell you after making them, and enjoying the crunchy fresh veggies, paired with lamb, that was cooked with middle eastern flavors. Nothing was weird about it at all. Instead of using chips, we used pita crackers and then made some tzatziki from scratch to top it off. What’s also awesome about these Greek Nachos is they are an obvious necessity for entertaining and you can put them together very quickly.
Tzat-whati? Tzatziki
Tzatzkiki is the perfect pairing with these greek nachos. But really, tzatziki is my favorite summer go to dip. It is great with veggies, rice cakes, chips, and paired with hummus. I make my tzatziki with Greek yogurt so its great source of protein. 22 g in one serving.
At the end of the day, these Greek nachos are the perfect shared plate. They are packed with nutrients from all the veggies and protein from the lamb and tzatziki. So go ahead, indulge!!
Greek Nachos
Ingredients
- 1 LB, Lean Ground Lamb
- 1 tbsp, Cumin
- 1 tsp, Fennel Seeds
- 1 tbsp, Paprika
- 1.5 tbsp, Salt
- 1/2 Cucumber, cut into slices and quartered
- 1/2 cup, Kalamata Olives
- 1/3 cup, banana peppers, sliced
- 1/4 cup, Feta Cheese, crumbled
- 1/4 cup, Red Onion, small diced
- 1 cup, Cherry Tomatoes, sliced in half
- 4 cup, Pita Chips
- 1/4 cup, Parsley, chopped
- Tzatziki Sauce:
- 1 cup, Greek Yogurt
- 3 Garlic Coves, Minced
- 2 tbsp, Dill, chopped
- 1 Lemon, juiced
- 1 Cucumber, de-seeded and small diced
- Salt and Pepper
Instructions
Preheat Oven to 400 degrees
Preheat cast iron skillet
Add cumin, fennel seeds, paprika, and salt to ground lamb
Once skillet is hot cook ground lamb with spices and break up into small crumbles
Once cooked transfer to bowl and wipe out cast iron with paper towel
Add pita chips
Top with ground lamb, olives, banana peppers, and feta
Pop into preheated oven for 10 minutes
Remove from oven
Top with cucumbers, tomatoes, onions
Last, sprinkle parsley to top it off
Serve with from scratch tzatziki
Tzatziki Sauce:
In bowl combine, Greek Yogurt, minced garlic cloves, dill, minced cucumber, and lemon juice
Add salt and pepper to taste
Mix until well combined
