I’m BACK, and bringing you this Sweet Potato Chorizo Hash.
I know, I know It has been ages! Before I dive into this sweet potato chorizo hash, I’ll bring you up to speed.
The Move
The last 5 months have been CRAZY. Up to my last post, we were inches away from moving from the place Bay and I had been living for the past 5 1/2 years. We have downsized A LOT and loving life in our beautiful new apartment home.
The Wedding
I successfully pulled off a catering gig for a 120 person wedding, with just the help of my mom. I will save you the drama, but it was probably one of the most stressful endeavors I have ever said yes to. Who knew one of my major life meltdowns would be on account of 40 pounds potatoes that needed to be mashed at 1 in the morning. And Baylen’s car will probably always smell like chicken. This might be because 1 gallon of chicken broth may have spilled under all the carpeting. You live and you learn. But seriously, it is March, and we still smell chicken- in every car ride. Yes, looks are exchanged, but no, words are not spoken.
The Restaurant
Lastly, the whole reason I took a break from blogging; In August, I was approached to start up a restaurant. We worked so hard. Menus, funding, looking at locations, a tasting, you name it. We did it. At the end of the day, none of the landlords wanted to lease to a start-up. Definitely a disappointment. But, I learned soooo much. Before being involved with a start-up, the idea of starting a restaurant seemed so unobtainable. The cool thing is, I got to experience a lot of the steps that you take during this process. So the way that I look at it? Life was just preparing me for something in the future.

This Sweet Potato and Chorizo hash is the real deal. I have already made it multiple times. It is perfect for a weekend brunch or you can prep everything except the eggs and eat it through out the week. I made it with chicken chorizo. This can typically be found at any grocery store. Feel free to sub it with pork if you wish.
Also, another great thing about this sweet potato and chorizo hash is that you can make it while sticking to most diets. Packed with protein and easily digested carbs, you will be in breakfast heaven.

Sweet Potato Chorizo Hash with Baked Eggs
Ingredients
- 16 OZ, Ground Chicken Chorizo
- 2 Sweet Potatoes, large diced
- 1/2 Red Onion, medium diced
- 1 Hatch Chili, desteemed, deseeded, medium diced
- 1 Yellow Bell Pepper, desteemed, deseeded, medium diced
- 1 tbsp, Garlic, minced
- 1/2 Avocado, cubed
- 1/4 cup, Green Onion, Sliced
- 3-4 Eggs
- Olive Oil
- 1 tbsp, Garlic Powder
- 1 tbsp, Chili Powder
- Optional: Greek Yogurt and Salsa To top
Instructions
Preheat oven to 400 degrees
While preheating the oven, toss cubed sweet potatoes in 2 tbsp of olive oil, 1/2 tbsp of salt, 1 tsp of pepper, 1 tbsp of garlic powder and 1 tbsp of Chili Powder. Toss until coated in mixing bowl
When oven is heated, pour contents of mixing bowl onto sheet pan
Bake for 15-18 minutes until roasted
In oven-proof skillet, add 1 tsp of olive oil on medium high, brown the ground chicken chorizo until fully cooked. Pour in bowl and set aside
Lower heat to medium, in same skillet heat 1 tsp of oil, add hatch chili, yellow bell pepper, garlic, and onion until fragrant
Turn off heat
Add ground chicken and mix
Once sweet potatoes are done, add them to skillet and mix to combine contents
Crack eggs on top of skillet content right on top
Sprinkle each egg with salt and pepper
Place skillet in oven for 6-10 minutes, until eggs are cooked to your preference
Top with green onion, avocado, greek yogurt, and salsa
