I mentioned that I recently started a new position which I am thrilled about!  I am a marketing assistant and the sales trainer for a property management company. It’s a pretty sweet gig. In my new role, I will be traveling to all our communities conducting training courses for all the leasing agents. This week I’m headed down to Tucson, AZ.

I think with traveling, I will get the opportunity to check out some cool local spots. Basically, I am a professional busy body. And if you know me you know I like to stay busy. So stay tuned for that.

And then to sweeten the deal even more we have a shorter week. Life doesn’t get much better.

 

So I basically ate pineapple fried rice every other day while in Thailand.

Pineapple Fried Rice- The Seasonal Junkie

First of all, I know what your thinking blah, blah, blah Thailand, Thailand, Thailand. Well second of all, you’re welcome.  Because so much amazing food comes from Thailand. And I decided to put a twist on the whole rice thing, by swapping rice out with quinoa this dish is perfect for vegetarians with quinoa being a complete protein.

What is also awesome about pineapple fried rice is if you are thinking about meal prepping. You can stop looking. Because cough, cough, this is a perfect addition to a meal rotation. To make this pineapple fried rice one step shorter, I like to pre-cook my quinoa the night before and store in the fridge so really all the time intensive steps are done! And in my experience it comes out better. If you wanted to add some protein to the pineapple fried rice, it pairs really well with chicken and shrimp. Try it out!!

Pineapple Fried Rice- The Seasonal Junkie

Pineapple Fried

Serves: 4
Cooking Time: 40 Min

Ingredients

  • 3 Cup, Cooked Quinoa
  • 1 Red Bell Pepper, diced
  • 1 Tomato, diced
  • 1 Cup, Pineapple, Diced or Crushed
  • 1 Cup, Carrots, Shredded
  • 1 Onion, diced
  • 1.5 tbsp Garlic, minced
  • 1 tbsp, Ginger, minced
  • 1 tbsp, Lemongrass
  • 1/4 Cup, Seedless Raisins
  • 1/4 Cup, Cashews, roasted
  • 1 Bunch Cilantro, Chopped
  • 1/4 Cup, Green Onion, Sliced
  • 1 tbsp, Turmeric, ground
  • 1 tsp, Coriander, ground
  • 2 tbsp, Agave Nectar
  • 1 tbsp, Fish Sauce, Tamari, or Soy Sauce
  • Juice of 1 Lime
  • Olive Oil
  • Salt and Pepper

Instructions

In large Skillet or Wok add, olive oil, garlic, ginger, lemon grass, and onion and sweat until it becomes fragrant and translucent

Be sure to season with salt and pepper throughout cooking process

Add red bell pepper, carrots, pineapple, turmeric, and coriander- Stir with wooden spoon until it starts to cook and soften

Add cooked quinoa and continue to stir, add raisins, cashews, tomato, agave nectar, fish sauce, lime juice- Cook until hot

Lastly add cilantro and green onion and stir to mix well

Season with salt and pepper if more is necessary.

Becasue I like spicy I added Sriracha,

    This looks absolutely delicious. I just love fried rice. And pineapple is supposed to help you loose weight. So it’s a win-win!
