You guys. Look at this Hatch Chili Burger. I’m like getting really really good at this Keto thing.
Literally while taking a bite of my hatch chili burger, I had this thought. Do I not know how to taste anymore? Because surely I cannot think that this bunless hatch chili burger… made of turkey. Is a gift from god. And then on my second bite, I was like damn Brookie, you got this keto thing, you got it.
7 Days. That’s how long it’s been….
Since sugar and bread and all of that. My morning routine has been many sunrises paired with bullet proof coffee and…. I kinda like it! At one point I was having this like existential realization of “Is this what it is to be a blogger?” “Putting all these weird things in my coffee and just liiiking it?” I’ll let you know when I find out, but from scrolling through my insta feed, I feel like I’m on the right track. Or maybe it’s the sugar withdrawals.
With this new Keto life being so new, it has been pretty fun trying to come up with recipes. This hatch chili burger just hit me over the head, it wasn’t even planned. I always feel like the best recipes happen that way.
Basically we ultimately failed keto the first four days because I had managed to spend $200.00 at Sprouts and out of food in 4 days. So a Costco trip was in order and guess what?! We spend $262.00 and I’m very sure we will have food for the next 2 1/2 weeks. My biggest recommendation for keto is to definitely bulk buy.

So there I was, in my newly stocked fridge.
And I remembered we bought these Roasted Hatch Chiles. And it dawned on me. Stick them in the burgers, Brooke. Stick them in the burgers. And wa-la I bequeath to you this magical Hatch Chili Burger recipe. And if you’re not keto put a bun on these bad boys, I bet they will be equally amazing!
Hatch Chili Burger
Ingredients
- 1 pound, Ground Turkey
- 3 tbsp, Hatch Valley Roasted Green Chiles
- 3/4 cup, Almond Meal
- 1/2 Red Onion, cut into slices
- 4 Mini Peppers, cut into thin rings
- 4 Butter Lettuce Leaves
- Optional: Pepper Jack Cheese
- 1 tbsp No Sugar Mayo
- 1 tbsp Chipotle Tabasco
- 1 Avocado, skin removed and cut into slices
- Olive Oil
- Salt and Pepper
Instructions
In medium mixing bowl add ground turkey, almond meal, chiles, salt, and pepper and mix together until combined
Separate into 4 equal pieces and form into disks
Set aside until ready to grill
Chipotle Mayo
In bowl add mayo and tabasco and stir until well mixed set aside
Onion and Pepper Topping
In skillet heat olive oil until hot
Add sliced peppers and onions and cook until browned season with salt and pepper
Set aside
Burgers
Put oil on both sides of burger
Heat Grill to 400 degrees
Place burgers on grill
cook one side for 5 Min then flip
Cook for about 15 minutes until inside of burger reaches 165
Add cheese to burgers if desired
To Assemble
Patty on top of lettuce leaf
Top with onions and pepper
Place Sliced Avocado
Drizzle Chipotle Mayo
Enjoy!
