Let me tell you, it was perfection.

Easy Coconut Curry with Chicken
Ingredients
- 2 Chicken Breasts, cut into bite-sized cubes
- 3 Carrots, peeled and diced
- 1 ½ tbsp Garlic, minced
- 1 cup Butternut Squash, medium diced
- ½ Red Onion, cut into thin strips
- 1 can Light Coconut Milk
- 1 Jalapeno, diced (if you leave seeds in, it will be hotter)
- ¼ cup Cilantro, roughly chopped
- 3 Green Onion, sliced
- Cooked Rice or Naan bread to serve with
- 1 tbsp Curry Powder
- 2 tbsp Agave Nectar/Sweetener of Choice
- 2 tbsp PB 2 or Peanut Butter
- Salt and Pepper
- ½-1 Lime, juice
- Olive Oil
- Optional Toppings: Sliced Red Cabbage, Bean Sprouts
- Optional Sides: Cooked Rice, Naan Bread
Instructions
Heat 2 tbsp of oil in large saute pan
Add red onion, garlic, carrots, jalapeno, and butternut squash
Add curry powder and stir
Add chicken and stir
Add coconut milk and cook down until it starts to thicken, about 20-25 minutes
Stir in 2 tbsp of pb 2 or peanut butter
Squeeze lime juice and sweetener and stir
Add Salt and Pepper to taste
Taste to see if you need more lime juice or any other seasonings
To serve pour on top of rice or serve along side naan bread
Top with cilantro, green onion, and other optional toppings
