What diet?! You will not believe the flavor explosion of this Whole30 Fish Taco Bowl with Cilantro Lime Cauliflower Rice.
Okay okay, cilantro lime cauliflower rice is not the same as cilantro lime regular rice. But, this Whole30 fish taco bowl is still super delicious. If you have been a follower of The Seasonal Junkie for a while, you know that I like to Whole30 every once in a while. I try to walk the straight and narrow at least once a year. And what can I say #NEWYEARNEWME.
But this year something magical happened…. I got a good chunk of my office to participate too. Which, Hello Accountability! I know it’s only been 7 days, but I honestly have had zero desire to cheat, which is awesome.
Anywho, for me to stay loyal to the Whole30 program I have to have variety.
Say it with me, VARIETY. GIVE ME OPTIONS!
So that is where this fish taco bowl with cilantro lime cauliflower rice comes in. The lime paired with the crunch of the red cabbage. Boom texture/flavor heaven. And yes, the cilantro lime cauliflower rice is amazing, but you won’t super bloated or gross after eating it. Really, it’s a win-win.
I used tilapia for the fish in this fish taco bowl, but really any white fish works and would pair nicely with the cilantro lime cauliflower rice. Speaking of pairing, this Whole30 Fish Taco Bowl wouldn’t be complete with out a mango salsa. It is super easy to make and adds a pinch of sweetness that you will very much appreciate if you are participating in Whole30.

Now, I forgot to mention. If you are not doing Whole30, this Fish Taco Bowl with Cilantro Lime Cauliflower rice, can be made with normal rice. (Also helpful if you are prepping for others *cough,cough my fiance*) And it will be equally delicious.

Whole30 Fish Taco Bowl with Cilantro Lime Cauliflower Rice
Ingredients
- Mango Salsa:
- 1 Mango, peeled and small diced
- 1-2 Jalapenos, de-seeded and small diced
- 2 tbsp Red Onion, small diced
- 2 tbsp, Cilantro, chopped
- Juice from 1/2 Lime
- Salt, to taste
- Cilantro Lime Cauliflower Rice:
- 2 Cups Cauliflower Rice, Frozen (I buy them in bulk from Costco)
- 1/4 cup Cilantro, chopped
- Juice from 1/2-1 Lime
- Salt to taste
- 1 tbsp Olive Oil or Ghee
- Fish:
- White Fish (I used tilapia)
- Chili Powder
- Cayenne Pepper
- Salt
- Pepper
- 1 tbsp Olive Oil or Ghee
- Chili Mayo:
- 2 tbsp Avocado Oil Mayo
- 1/2 Juice from a Lime
- 1/2 tsp Chili Powder
- 1/4 tsp Cayenne Powder
- Salt, to taste
- Other Toppings:
- Shredded Cabbage
- Avocado
- Sauteed Red Bell Pepper (fajitas)
- Cilantro, chopped
Instructions
Mango Salsa:
Add all Mango Salsa Ingredients to bowl
If you want it to be spicy feel free to leave seeds from jalepenos
Stir to combine
Set aside in fridge
Sauteed Red Bell Pepper:
Heat pan with olive oil/ghee
Once hot add red bell pepper
Cook until they start to get fragrant and dark spots
Remove from heat set aside
Cilantro Lime Cauliflower Rice:
Using same pan from bell pepper
Heat 1 tbsp of olive oil/ghee on medium heat
Add frozen riced cauliflower
Don't touch for 4 minutes
Once there is no liquid start to stir
The cauliflower should start to turn a little golden
Add lime juice and stir
Add salt and cook for another 1-3 minutes until no liquid
Stir in chopped cilantro
Once done cooking taste to see if you need more lime juice or salt
Place in bowl and cover, set aside
White Fish:
Season fish on both sides with chili powder, cayenne, salt, and pepper
Heat same pan with 1 tbsp of olive oil/ghee
Once steaming hot, Place fish in pan and cook for 4 minutes
After 4 minutes flip and cook for an additional 3-5 minutes until done
Both sides should be seared
Chili Mayo:
In small bowl, combine mayo, lime, chili powder, cayenne pepper, and salt
Taste to see if you need to adjust any seasonings
Set aside
To assemble:
Fill bowl with 1 cup of cauliflower rice
Top with fish, salsa, red bell pepper, shredded cabbage, avocado
Drizzle chili mayo
Sprinkle cilantro on top
Enjoy
