Whip up a batch of these sloppy joe stuffed peppers and never go back to the canned wall that held you back before!
Sloppy Joe Stuffed Peppers
Ingredients
- 1 1/4 Pounds Ground Turkey
- 1/2 Onion, small diced
- 1 tbsp Garlic, minced
- 1 Green Bell Pepper, small diced
- 1 Red Bell Pepper, small diced
- 1 Celery Stalk, small diced
- 3/4 cup No-Sugar Added Ketchup
- 2 tbsp Tomato Paste
- 1 tbsp Coconut Aminos
- 2 tbsp White Wine Vinegar
- 1 tsp Chili Powder
- 1 tsp Paprika
- Salt and Pepper
- 1/2 tsp Cayenne Pepper
- 3 Yellow Bell Peppers, cut in half and deseeded
- Salt and Pepper
- Olive Oil
- Optional: Avocado Chives, sliced
Instructions
Preheat oven to 400 degrees
In skillet, heat 1 tbsp of olive oil over medium heat
Once hot, add ground turkey and use a wooden spoon to break up meat
Once done cooking set ground turkey in a bowl on the side
Heat used skillet up again add 1 tbsp of olive oil
Once hot add, onion garlic, chopped bell peppers (not the halved ones), and celery
Allow to cook and become translucent and fragrant
Add tomato paste and stir to cook
Allow to coat veggies
Add cooked meat and stir to combine
Add white wine vinegar, coconut aminos, ketchup, chili powder, paprika, cayenne pepper, salt and pepper
Stir to combine
Add water and stir
Allow the water to cook out until it resembles the sloppy joe mix that your mom used to make
Turn heat off
Line baking sheet with halved yellow bell peppers
Scoop mixture into hollow part of peppers
Bake for 30 minutes
Remove from oven
Top with Avocado and Chives
Enjoy!
