Ring, ring. Sorry I can’t come to phone right now because I can’t get over this Paleo Waffle Breakfast Sandwich.
Okay, that was obnoxious, but seriously?! These paleo waffle breakfast sandwiches are also obnoxiously amazing.
The hardest part about going to a paleo-based diet is definitely all the bready goodness that you no longer get to indulge in. And even though I do treat myself from time to time, going 80-90% of the time without baked goods can be hard.
But then, this paleo waffle breakfast sandwich was born and made all my breakfast dreams come true.
It all started one afternoon in my work kitchen…
For those of you that don’t know, by day I am a sales trainer at a fabulous property management company. And during one of my always needed coffee breaks, I was RAVING about Birchbender’s paleo pancake mix. Seriously, guys. It is soooo good. It must be the cassava flour they use, because it tastes like normal pancakes/waffles/whatever the heck your making. Well anyways back to the story. As I was raving about these gems, my coworker said they were too sweet for her, and she thought a breakfast sammy would be good.

As she left, I was immediately consumed by the thought of a Paleo Waffle Breakfast Sandwich
And guess what?! This paleo waffle breakfast sandwich was one of the best things I’ve had in a while. A perfect mixture of savory and sweet. Stuffed inside of these two fluffy pillows of paleo waffle goodness was a sunny side up egg, a chicken-sage breakfast patty, avocado, and then a drizzle of pure maple syrup to finish it off.
Well go ahead and order this mix now, and make this paleo waffle breakfast sandwich. Your heart and your soul both deserve it.
Paleo Waffle Breakfast Sandwich
Ingredients
- 1 lb Chicken Sausage
- 1 tbsp Sage, chopped
- 2 tsp Rosemary, chopped
- 1 1/2 tsp Salt
- 1 tsp Pepper
- 1 tsp Ghee
- 1 cup Birchbender's Paleo Mix
- 3/4 cup Almond Milk
- 1 1/3 tbsp Melted Ghee
- 4 Eggs
- 1 Avocado, cut into slices
- Optional: Maple Syrup to drizzle on top
Instructions
Chicken Sausage Breakfast Patties:
In a bowl, mix chicken sausage, sage, rosemary, salt and pepper until evenly distributed
Make into patties, you can probably get 4-6
Heat large skillet with 1 tsp of ghee until hot
Cook chicken patty on one side until browned, flip and cook other side until cooked all the way through
When finished cooking cover to keep warm
Waffles:
Heat up your waffle iron
Mix together Paleo waffle/pancake mix, almond milk, and melted ghee
Once waffle iron is hot cook waffle mix
Once they are done cooking remove and set aside, covered
I like to pop mine in the microwave because it keeps them warm
Eggs:
Heat small frying pan with 1 tsp of oil/ghee
Cook four eggs sunny side up or fried over easy, which ever you prefer
Assemble:
Segment your waffle to desired size, I separated my big one into fourths
Layer with chicken sausage patties, egg, and avocado
Top with other half of waffle
Drizzle with maple syrup if desired
