Cauliflower Rice has such a bad rep and you know what?! I’m sick of it. This Whole30 Kimchi Fried Rice is about to change everything you know.
Before I talk about this kimchi fried rice, we need to set the record straight. And I’m here to do it. So if you have been living in a world where your cauliflower rice is soggy, mushy, and just plain gross I’m sorry, but you have been doing it wrong.
First, you get your pan as hot as the sun. Which is pretty damn hot. Add your oil and wait until you see it smoke (this is the MOST important part). Now add you’re cauliflower rice and fry it.
There you have it, that is how to cook cauliflower rice.
The same technique goes for this Whole30 kimchi fried rice. And you are going to absolutely love it. The first reason being, the kimchi of course. Cauliflower rice pretty much takes on any flavor, which makes it a delicious little flavor sponge waiting to absorb all of life’s flavors. Kimchi is the perfect addition to cauliflower rice, it gives the dish an umami exerience.

Kimchi is a fermented Korean side dish. Because it is fermented it has probiotic qualities; this makes it great for digestion. Kimchi is also high in fiber, iron, and calcium. So basically, if you have not tried this spice bomb, now is the time.
Breakfast, lunch, or dinner?!
That’s right, this whole30 kimchi fried rice is great for all of the above. And it’s done in less than 15 minutes. Which hello, a 15 minute dinner? Sign me up. Feel free to add chicken or ground beef for added protein, because yum. Personally, I’m good with the eggs.

Whole30 Kimchi Fried Rice
Ingredients
- 3 cup Cauliflower Rice
- 8 oz Mushrooms, sliced
- 1/2 Onion, diced
- 1 tbsp Garlic, minced
- 4 Eggs
- 1/4 cup Kimchi, soy and sugar free
- Avocado, to top
- 2 tsp Black Sesame Seeds
- 1/4 cup Green Onion, sliced
- Olive Oil
Instructions
Get pan really hot
Add 1 1/2 tbsp oil, once it starts smoking add sliced mushrooms
Be sure not to overcrowd, sear bottom side (until mushroom is brown)
Place Mushrooms in bowl on the side 1/2 tbsp olive oil to used pan
Once smoking hot add frozen cauliflower rice, onion, and garlic, stir to coat
Once fragrant add cooked mushrooms and stir, cook for about 3-5 minutes (the longer you cook the cauliflower rice the softer it will be, I prefer mine around 3 minutes)
Stir in Kimchi and allow liquid to cook out
Turn off heat
In separate pan cook eggs how you would like, I did sunny-side up but over easy is good as well
Feel free to serve with soft-boiled.
To assemble, place kimchi rice in bowl
Top with sliced avocado, cooked eggs, sesame seeds, and green onion
Enjoy!
