I think I speak for most of us when I say the reason you might get sick of chicken is because of how you prepare it. If you’re eating an overcooked chicken breast accompanied with some veggies, it is going to get old- quick. So me, I’m always looking for new ways to spice it up. Which is when I thought of the most summer chicken recipe, healthy bruschetta chicken.
So I guess first and foremost we need to address the number one chicken cardinal rule. If you are overcooking your chicken… stop it!
Overcooking chickens makes the protein rubbery and almost unbearable to eat. Searing your chicken first and finishing it in an oven is the best way to avoid overcooking your chicken. And that’s exactly how we are going to cook this healthy bruschetta chicken. My recommendation would be to get yourself a thermometer to read the temperature so you’re not left guessing and you can have perfectly cooked 165 degrees chicken breast.
Anywho, back to this summer chicken recipe…
So bruschetta is like epitome of summer. And if you don’t agree with me, I have one word for you: Tomatoes. Tomatoes are about as summer as you get. So the idea behind this healthy bruschetta chicken is this. The chicken breast acts in the bread place and the beloved bruschetta tomato, basil, balsamic is mounded on the top. Making it so beautiful, so droolworthy, but so worth it.
I used my cast-iron skillet to cook this bad boy, but because of summer feel free to grill using your methods and then serve with the bruschetta topping!
There you have it kids, whip this summer chicken recipe up now and wave good bye to boring old plain chicken… cuz you deserve it!
Healthy Bruschetta Chicken
Ingredients
- 4 Chicken breasts
- 2 tbsp Oil
- 2-3 Tomatoes, diced
- 1/4 cup Basil, thinly sliced
- 1-2 Cloves of Garlic, minced
- 2 tbsp Balsamic Vinegar
- 2 tbsp Olive Oil
- Salt and Pepper, to taste
Instructions
In non-reactive bowl add diced tomatoes, thinly sliced basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper
Stir to mix and set in fridge to marinate for about 30 minutes
Pre-heat oven to 400 degrees
Season chicken breast with salt and pepper
In oven safe pan, heat 2 tbsp of oil/ghee on medium high heat until very hot
Add chicken breast and sear one side for 3-5 minutes, until golden
Once golden, flip and repeat on opposite side for 3 minutes
Chicken will not be cooked through yet, once the opposite side is seared properly
Pop oven safe pan with chicken into the preheated 400 degree oven cook for about 8-12 minutes until chicken reaches 165 degrees
Remove from oven and allow to rest for 3-5 minutes
Scoop tomato mixture and serve over the top
