Reasons why fall is so amazing: Casserole city, friends. And really, you tell me what could be better than an ooey, gooey delicious Quinoa Casserole? Oh right, make that a baked chicken caprese quinoa casserole. By the time this baked chicken caprese quinoa casserole is ready to be pulled out of the oven, it would be entirely safe to say it will likely only last 10 minutes on your kitchen table. It is that good.

As if you needed one outside of how delicious this baby is… you really can’t go wrong with the combination of tomatoes, basil, and chicken. So I thought- Why don’t I add some quinoa to the mix and make this a complete meal. And I am so glad I did. There are so many health benefits to quinoa, and I wanted to share a few. For all my friends that are meat-free, did you know that quinoa is a complete protein? Well it is, so sprinkle in the quinoa where you can. In one cup of cooked quinoa, there is actually 8 grams of protein. Quinoa is excellent for blood sugar control, meeting your daily fiber count, and will help increase your metabolic rate. So there, add this baked chicken caprese quinoa casserole into the mix stat.

It literally is what I picture a weeknight meal is in it’s prime. I like to have quinoa prepped out all week, because it’s such an easy side. I actually use my rice cooker (2:1 ratio liquid:quinoa) So I had my quinoa pre-prepped and ready to go, My recipe yields 4 servings, so if you are cooking for 2 you can say hello to all things leftovers. Or go crazy and double it up! You won’t be disappointed. Well friends, I don’t know what else to say, but do yourself a flavor (yes, flavor) and make this baked chicken caprese quinoa casserole. Cuz it’s da bomb.

Baked Chicken Caprese Quinoa Casserole

Prep Time: 30 minutes Cooking Time: 20 minutes Total Time: 50 minutes

This baked chicken caprese quinoa casserole is the perfect comforting dish for fall! A breeze for a weeknight dinner and great for leftovers!

Ingredients

  • 1 lb Chicken Breast, cut into bite size pieces, seasoned with salt and pepper
  • 1 cup Cherry Tomatoes
  • 1/2 cup Packed basil, thinly sliced
  • 1 1/2 cup Tomato Sauce
  • 3 Cup Quinoa, Cooked
  • Salt and Pepper, to taste
  • 2 tbsp, Garlic, minced
  • 2 tsp Dried Thyme 
  • 2 tbsp Olive Oil
  • 1 Cup chicken Stock
  • 4 oz Fresh Mozzarella, sliced
  • Non-stick Olive Oil Spray

Instructions

Preheat Oven to 400°,

Heat Oil in Large Saute pan on medium-high heat

Once pan is hot, add chicken and cook for 5-8 minutes until golden on both sides

Add Minced garlic and 1/2 of the cherry tomatoes, while stirring until fragrant

Add tomato sauce, dried thyme, cooked quinoa, chicken stock, and 1/4 cup sliced Basil

Season with salt and pepper

Heat while stirring until hot

Spray casserole dish with non-stick olive oil

Pour mixture into dish

Add Fresh mozzarella and remainder of cherry tomatoes on top

Cook in oven for 15 Minutes, switch to broil for the last 3-5 minutes until Golden

Sprinkle remaining thinly sliced Basil on top
