Anytime there are eggs on the menu for breakfast, sign me the heck up! Now, typically my usual breakfast go-to recipe is eggs and toast. But you know what?! I was in the mood for something spicy. Which is the perfect mood for easy huevos rancheros!
You might be scratching your head thinking, what in the world are huevos rancheros?
In Arizona this is quite a common breakfast option at various Mexican and Tex-Mex restaurants. Huevos rancheros is considered a traditional Mexican breakfast dish. If you’re not from AZ, here is the run down. It’s a warm tortilla with re-fried beans spread all over it, topped with fried eggs, and salsa. (And any other toppings your heart desires). And the combo is amazing!
Even though huevos rancheros is considered a traditional Mexican Breakfast dish, my easy huevos rancheros version isn’t exactly “traditional”. I wanted to “healthy” it up a bit. I swapped out traditional tortillas for whole-wheat and instead of pinto beans, I used black re-fried beans. Black beans are higher in protein and fiber per serving than pinto beans, and in my opinion just as delicious! I typically use Trader Joe’s re-fried black beans and it’s always amazing, but I’m thinking I see an insta pot version in my near future- so I’ll be sure to share.
My favorite way to eat these easy huevos rancheros is using a knife and fork and cutting right into that beautiful yolk. The combination of the cream yolk, spicy salsa, and chewy tortillas is out of this world. So freaken good. Well these bad boys can be on your breakfast plate in under 15 minutes so I say, get it! The healthy version of a traditional Mexican breakfast dish is waiting for you to make!

Easy Huevos Rancheros
These Easy Huevos Racheros are a healthy spin on a traditional Mexican breakfast dish. Very little prep, you can enjoy within 15 minutes!
Ingredients
- 4 Whole Wheat Tortillas
- 4 Eggs
- 1 1/2 cup Chipotle Salsa, or salsa of choice
- 1-16 oz can Refried Black Beans
- 1-2 Avocados, diced
- 1/2 cup, Cilantro, chopped
- 1 tbsp. Olive Oil
- 1/2 tsp Olive OIl
- Salt and Pepper
Instructions
In a pot, add re-fried black beans and heat while stirring on medium-low, don't forget about them because they will burn, once hot turn off heat and cover
In a small saute pan add 1/2 tsp of olive oil and salsa and cook on Medium-Low and simmer until it thickens up a bit once it has, turn off heat and let sit
In large saute pan add one tbsp of olive oil and heat on medium-low cook 4 eggs, sunny side up, season the eggs with salt and pepper
Heat tortillas up directly on fire if you have a gas stove or using a skillet if it is electric
To assemble put a hot tortilla on a plate, spread about 3-4 oz of black beans on your tortillas, top with an egg
Using a spoon, spoon salsa over the egg and garnish with avocado and chopped cilantro
Enjoy!
