Cool down dinner with this Sesame Kale Cold Soba Noodle Salad with Shrimp!
Now that’s a mouthful, but man is it a good mouthful. Okay, so I’m gonna call it like I see it. It was 105 degrees this weekend so it is freaken summer. And Saturday night…. guess what happened…. at the peak of our hot hot summer beginning …. our A/C goes out! I’m talking 2 am- 90 degrees in our apartment. It was the hottest sleep ever. Needless to say, ovens where out of the question. Making this Sesame Kale Cold Soba Noodle Salad perfect!
So basically, I plan on eating Cold Soba Noodle Salads all summer long. But first, let’s talk about THIS Cold Soba Noodle Salad! The ingredients are simple. Massaged kale, green onion, and seared shrimp. All of this is tossed in the lightest sesame dressing.
Let’s Talk About This Sesame Kale
Personally I love kale in all forms. Blended, raw in salads, sauteed, roasted, and yes even massaged. No that is not a typo, massaging kale is a thing. When you massage kale it breaks down the toughness and make texture just ever so tender. Take it from me, once you massage your kale your life will be forever changed.
In this Sesame Kale Cold Soba Noodle Salad, I used sesame oil and a pinch of salt then for a good 3-5 minutes, I rub the oil into the kale until the texture softens up and the leaves begin to glisten. You can do this with any oil, given the Asian flair- sesame oil was my obvious choice.
To Top it Off…. SHRIMP!!
It is no secret that I LOVE seafood. Which is why I seared up some shrimpies to make this a complete meal. You could definitely have it without shrimp or sub in your protein of choice, but the seared shrimp was SOOO good. I added a little chili flake for some spice and it was perfection!

Sesame Kale Cold Soba Noodle Salad with Shrimp
This 30 minute meal is the perfect cool dish for a summer night! Cook this Sesame Kale Cold Soba Noodle Salad with Shrimp now!
Ingredients
- 12 oz Soba Buckwheat Noodles
- 1 bunch Lacinato Kale, stems removed and chopped
- 4 Green Onions, chopped
- 1/4 cup and 1 tbsp Toasted Sesame Oil
- 2 coves Garlic
- 1/2 tsp Ginger, minced
- 1 tbsp Soy Sauce
- 1 tbsp Rice Wine Vinegar
- 1/2 tsp Agave Nectar or Honey
- Pinch of Salt
- Shrimp:
- 1 1/2 pound Shrimp, cleaned
- 1 tsp Oil
- 1 Lemon
- Salt and Pepper
- Optional: Red Chili Flakes
Instructions
Noodles:
Cook soba noodles according to package instructions
Afterwards, rinse with cool water, strain, and set aside in fridge while preparing everything else.
Kale:
In a mixing bowl add chopped kale, 1 tbsp of sesame oil, and a pinch of salt and knead and squeeze chopped kale until they become tender and shiny
Set aside
Dressing:
Mince garlic and ginger together until it becomes a paste, or use a mortar and pestal and smash together into a paste
Mix in small bowl smashed garlic, ginger, soy sauce, vinegar, honey/agave nectar, and sesame oil whisk together
Shrimp:
Heat skillet on medium heat, add oil
Season shrimp with salt and red pepper flakes if desired
Once pan is hot, add shrimp and cook for about 1 minute
Squeeze lemon, flip shrimp and cook for another 1-2 minutes until cooked through
Turn heat off
Assemble:
In mixing bowl add noodles, massaged kale, dressing, and toss to mix evenly
Top with cooked shrimp and chopped green onions
