Who doesn’t Love a Shrimp Quesadilla Recipe?!
I don’t know about you guys, but the only thing that can make cheese and carbs even better would be shrimp fajitas. So that is what we are doing today people: Shrimp Fajitas Quesadilla.
Okay but seriously friends, can we talk about why this shrimp quesadilla recipe was a GREAT idea?!
So I’ve kinda lost track. But I’m fairly certain that I’m on officially my 1 billionth meal of cooking. I cannot tell you how many times I have cleaned my kitchen, how many pots I’ve scrubbed, and how many sweet baby dishwasher pods I have gone through. And apparently, AZ is the newest COVID hot spot. So alas, I will be cleaning pots with no end in sight. I also, may or may not have ordered a bulk pack of dishwasher pads. I know, V exciting- what a time to be alive!
Anyways, I’ll save ya’ll the dramatics. The reason I’m obsessed with this shrimp quesadilla recipe is because it can be a one pan wonder. Done in like 15 minutes or less. And sooo FREAKEN GOOD. You know I’m always game for less dish washing and more eating. Always more eating.
Some things you are going to need with these Shrimp Fajita Quesadillas to be successful. Yes, it matters.
1.) Guacamole- this is a must, no exceptions a must for this shrimp quesadilla recipe
2.) Salsa, needed to spice up your life
3.) Crema, sour cream will do- but if you can find crema always use crema

2.) Healthy Mexican Cauliflower Rice
Shrimp Quesadilla Recipe
This Shrimp Quesadilla Recipe is packed with flavor and so easy to make! Get your hands on this shrimp fajita quesadilla now!
Ingredients
- 4-6 Tortillas
- 1 tsp Olive Oil
- 1 pound of Shrimp, peeled and deveined
- 1 cup Shredded Mexican Style Cheese
- 1 Red Bell Pepper, sliced into strips
- 1 Green Bell Pepper, sliced into strips
- 1/2 Red Onion, thinly sliced
- 1 tsp Chili Powder
- 1 tsp Cumin
- 1 tsp Salt
- 1 Lime, juice
- Optional: Served with chopped cilantro, crema, gauc, and salsa
Instructions
Heat oil in skillet on medium-hot, once hot add sliced peppers and onion into pan cook while stirring
Once they start to soften add shrimp, chili powder, cumin, salt, and lime juice
Flip shrimp after 3 minutes and cook for an additional 3 minutes
Once completely cooked add contents to a bowl on the side
Clean skillet
Turn heat to medium-low
Put down tortillas, add a scoop of peppers and shrimp, sprinkle 1/4 cup cheese
Once cheese starts to melt fold tortillas in 1/2, flip and cook until cheese is fully melted
Repeat with additional tortillas
Serve with gauc, crema, salsa, and cilantro
