Creamy. Dreamy. Banana Bread Overnight Oats.
It’s no secret that hot summer days require as many cool recipes as we can come up with! And what I have for you my peeps, is a banana bread overnight oats recipe!
Now don’t get me wrong, I know banana bread has been all the craze with everyone baking so much. The only problem for me in this scenario, is Phoenix is averaging over 110 degrees every day. I actually think we have been in a heat wave. I got in my car and it was like 116 degrees on the way to the grocery store yesterday. It’s been rough and turning on the oven just isn’t an option. (side note: thank goodness Fall is around the corner). So until further notice, we will be whipping up things just like these banana bread overnight oats! Which makes the heat not soooo bad. Emphasis on sooo.

I LOVE toppings. I topped my banana bread overnight oats with dark chocolate, cinnamon, walnuts, and of course bananas. Every bite tasted just like banana bread, but in creamy, oaty, goodness form! Banana Bread Overnight Oats

Ingredients
- 2 cups Rolled Oats
- 2 cups Almond Milk
- 2 cups Greek Yogurt
- 3 tbsp Chia Seeds
- 3 tbsp Maple Syrup
- 1 tbsp Vanilla
- 2 Ripe Bananas
- 1 tbsp Cinnamon
- Optional Toppings: Walnuts, Dark Chocolate Chips, Sweetened Greek Yogurt, Cinnamon Sprinkle
Instructions
In a mixing bowl add ripe bananas and mash using an avocado masher until completely mashed up. Add rolled oats, almond milk, 1 cup greek yogurt, chia seeds, maple syrup, vanilla, and cinnamon to bowl and mix together. Put into jars (you can purchase the ones I use from link in blog post, scroll up) and allow to sit for at least six hours.
In a smaller mixing bowl add 1 cup of greek yogurt to 1 tbsp honey (you can use more if you'd like it sweeter) store in fridge until you are serving overnight oats
Once oats are ready to go, top with sweetened greek yogurt, and other additional toppings. I used chocolate chips, walnuts, and cinnamon
