This Low Carb Eggplant Pizza is what dreams are made of…
I could literally eat pizza every night… but you know… moderation is a thing. Am I right?! So I came up with a nice substitution that suits my cravings, but isn’t going to totally ruin my meal budget for the day. Introducing: low carb eggplant pizza. Seriously this gem is perfect for dinner and lunch!
Preparation is key with this recipe!
Eggplant can be a little bit particular, but if you follow all the right steps it will come out perfect!
First things first, salt your eggplant slices and let the moisture come out of them!
This is super important because you don’t want your low carb eggplant pizzas to be soggy and the salt draw the bitterness out of them.
Now, roast these little babies
Roasting them first for about 10 minutes before you add on your toppings will allow the eggplant to cook entirely and not overcook your toppings.

Low Carb Eggplant Pizza
This low carb eggplant pizza recipe is the perfect recipe when your craving pizza but don't want feel like you ate a pizza! Perfect for a weeknight dinner!
Ingredients
- 2 Eggplants Sliced into 1-in coins
- 8-12 oz Pizza Sauce (you will likely have left overs)
- 6-8 oz Shredded Mozzarella Cheese
- 1 cup Shredded Parmesan
- Olive Oil Spray
- Salt and Pepper
- Italian Seasoning
- Optional Toppings: Prosciutto, Basil, Pepperoni, Black Olives, Sausage
Instructions
Place Eggplants down onto paper towel and sprinkle with salt, allow to sit for 15-30 minutes to draw out the moisture. Preheat the oven to 400 degrees. After you have let them sit use a paper towel to soak up excess moisture that has been drawn out.
Brush oil, Italian seasoning, salt, and pepper to the top of each cut eggplant. Bake in oven for 10-12 minutes, and then remove. Spread pizza Sauce over the top, any topping you would like, and finally top with mozzarella and Parmesan. Return to oven for another 5-8 minutes, until cheese is melty and possibly golden. Remove and enjoy!
