These New Mexican Meatballs are the Perfect Chilly Night Fix!
Christmas is almost here and I am so excited to be whipping up everything cozy and comforting. And if there is one meal that is comforting, It’s definitely meatballs. Meatballs are sooo versatile, and you are going to love these New Mexican Meatballs.
That beautiful sauce you see those perfect meatballs just resting in? Oh yes, that is a green chili pork sauce. This recipe is part of my recipe series with Stokes Green Chili. All I did, was mix the green chili sauce with some salsa verde and boom! The result was the most flavorful sauce, no added seasoning needed! Click this link to see where you can pick up a can!

New Mexican Meatballs
Boring Meatballs who?! Spice up your life with these New Mexican Meatballs!
Ingredients
- 1 ¼ lb Ground Pork
- 1 Egg
- ½ cup Bread Crumbs
- ½ tsp Garlic Powder
- 1 tsp Chili Powder
- ½ tsp Dried Cumin
- ½ tsp Dried Oregano
- ¼ cup Cilantro, chopped
- 1 Can Stokes Green Chili Sauce with Pork
- 1 ½ cup Salsa Verde
- 1 ¼ tsp Salt
- Optional Topping: Chopped Cilantro, Queso Fresco, Sliced Fresh Jalapeños, Sliced Green Onions, Diced Avocado, Lime
Instructions
Preheat Oven to 400 degrees. In a medium mixing bowl, add ground pork, egg, bread crumbs, garlic powder, chili powder, dried cumin, dried oregano, chopped cilantro, and salt. Mix together well with hands, until it is completely mixed. Using a large cookie scoop, scoop meatballs and form into balls with hand. I got 8 meatballs, you may get more or less depending on your cookie scoop.
Heat a oven safe skillet. Once hot add meatballs and sear for about 3-4 minutes until bottom is browned. Flip and sear opposite side.
In a bowl add Stokes Green Chili Sauce with Pork and Salsa Verde whisk together. Pour mixture into oven safe skillet. Pop skillet into oven for 20-25 minutes or until meatballs reach 165 degrees. Add preferred optional toppings. Serve Hot.
