Puff Pastry Salad Flatbread

Easy and so Elegant, this Puff Pastry Salad Flatbread is Spring AF.

If you have never had salad on your pizza or flatbread you are doing it wrong. It’s the perfect way to lighten up our favorite carby friend. For this dish, I also veered from the normal pizza dough. Instead I opted for puff pastry and the result was perfect buttery layers of pastry goodness. Buying premade puff pastry makes this dish so easy and quick! Make it now!

Puff Pastry Salad Flatbread

Ingredients

  • 1 Sheet Thawed Puff pastry
  • 1 clove of Garlic, minced
  • 4 oz Mushrooms, sliced
  • 6 oz, Shredded Mozzarella
  • Olive OIl
  • 1 tsp Italian Seasoning
  • Salt and Pepper, to taste
  • Salad:
  • 2 cup Arugula
  • 1 tbsp Olive Oil
  • 1/2 Lemon, juice
  • Salt and Pepper
  • 1 Slice Prosciutto, torn apart
  • 1/4 cup Shaved Parmesan

Instructions

Preheat Oven to 350. In a skillet, saute mushrooms in oil. Add salt, pepper, and Italian seasoning. Cook until mushrooms are browned. Turn of heat and set aside.

Cut thawed puff pastry in half. Rub pastry with oil and minced garlic. Top with mushrooms and cheese. Cook in preheated oven until golden about 13-15 minutes. While pastry is baking. Toss arugula, oil, lemon juice, salt and pepper. Set aside.

Once pastry is golden. Remove from oven top with tossed salad. Add pieces of prosciutto and shaved parmesan. Enjoy!
