Spring Orzo Shrimp Scampi
This Spring Orzo Shrimp Scampi is a one-pan wonder featuring a light, bright spring dish for you and your family!
Ingredients
- 4 tbsp Butter, unsalted
- 1 tbsp Olive Oil
- 1 Lemon, zested
- 4 cloves of Garlic, minced
- 1 pound of Shrimp, deveined
- 1 Shallot, minced
- 1 cup Orzo
- 2 cup Chicken Stock
- 1/3 cup Dry White Wine
- 1 pound of Asparagus, stems trimmed
- Salt and Pepper
- Optional: Serve with chopped parsley
Instructions
In a bowl add shrimp, 1/2 of minced garlic, lemon zest, 1 tbsp of olive oil, salt and pepper. Allow to marinate for 30 minutes in fridge.
In large pan add butter, garlic, and shallot over medium/low heat. Allow to cook while stirring for 2-3 minutes and fragrant. Stir in orzo and cook while stirring for 2 minutes to toast the orzo. Stir in white wine and allow to cook out while stirring. Season with salt and pepper.
Now add in chicken stock and cover with a lid for 5 minutes. Remove lid and let cook for another five. Add in trimmed asparagus and cook for another 2 minutes. Season with salt and pepper and add the juice of one lemon into dish. Stir to mix.
Using tongs, add in your shrimp and push shrimp into orzo throughout dish. Place lid back on pan and allow to cook for 2-4 minutes until shrimp is cooked throughout and pink.
Garnish with chopped parsley and enjoy.
