Move over grinder sammys, the new thing is Italian Chopped Salad Pizza! And I am ALL about it!
Confession: My favorite sandwich is a good Italian sandwich. And if you give me an antipasti salad – game over. They are just the best. So after Tiktok was taken by storm by grinder sandwiches, I immediately wanted to make a pizza version. Because, why not?! Honestly, it was the best decision. This Italian Chopped Salad Pizza was the ultimate combo in my world. A little pizza and a little salad (balance, am I right?) and badda bing, badda boom. Heaven.
The recipe calls for any pizza dough recipe you like. Heck sometimes I just ask my local pizzeria if they sell extra dough. This time, I ended up using Roberta’s Pizza Dough recipe that I found on NY Times! A friend of mind turned me on to using ’00’ Flour for pizza and I haven’t looked back.
And YES, this Italian Chopped Salad Pizza was a little messy- but that is nothing a fork can’t handle!

Italian Chopped Salad Pizza
Italian Chopped Salad Pizza: a marriage of my two favorite dinner combos: Salad and Pizza! Perfect If you are fans of grinder sandwiches or antipasto salad.
Ingredients
- Your favorite pizza dough recipe or store bought. One salad is enough for a 12-18 in Pizza.
- Chopped Salad:
- 1/2 head Iceberg Lettuce, shredded
- 1/4 cup Red Onion, diced
- 2 Roasted Red Bell Pepper, chopped
- 4 oz Fresh Mozzarella, diced
- 1/3 cup Cherry Tomatoes, halved
- 1 Fennel, shaved or sliced very thin on a mandolin
- 1/4 cup Pepperoncinis, chopped
- Dressing:
- 2 tbsp Red Wine Vinegar
- 1tbsp Dried Oregano
- 3 tbsp Mayo
- 1/2 tsp Sweetener
- 1 tsp Dijon Mustard
- Salt & Pepper
- 1/4 cup Artichoke Hearts, chopped
- 1/4 cup Black Olives, sliced
- 4 oz of your favorite Italian deli meat, Sliced
- Pizza:
- 1 tbsp Olive Oil
- 1-2 Cloves of Garlic, minced
- Melted butter
Instructions
Preheat Oven to 425 degrees. Stretch pizza dough out. Rub dough with a tbsp of olive oil and minced garlic sprinkle with shredded cheese over the top. Brush crust with melted butter and bake for 12 minutes or until crust is golden.
While pizza is baking, add dressing ingredients to a jar and shake. Add all salad ingredients to a mixing bowl and toss with dressing. Place in fridge until pizza is done. Once pizza is baked, take out of oven and top with prepped salad! Cut pizza and enjoy!
