I’m not sure there is anything more “summer” than this Grilled Watermelon Salad.
Okay so at one point while filming/shooting this salad I was taken back by how beautiful it was. Hands down, this might be one of my most picture perfect salads. An accomplishment I really didn’t even know I was trying to achieve. But friends this Grilled Watermelon Salad quite literally took my breath away. Que the cheesy music.
Okay so, I made this grilled watermelon salad for dinner and because of this, I added some grilled chicken making it perfectly filling. You can choose whatever protein you’d like however, or go sans protein. Still a great summer option. My pro-tip for grilling the watermelon is to keep the rind on while grilling to they stay together, but cutting them off after grilled. Makes it a lot easier to eat. I left the rinds on for aesthetic purposes, but then when it was time to eat I definitely cut those bad boys off. This salad is gorgeous and the perfect flavor combination for your summer cravings!

Grilled Watermelon Salad
Bite into summer with this Grilled Watermelon Salad. Perfect for your next bbq or summer dinner fav!
Ingredients
- 4 oz Feta, cubed or crumbled
- 1 small Shallot, thinly sliced on a mandolin
- 4 cups Arugula
- 1 packed cup Basil, torn
- 1 small Watermelon, cut into wedges
- 1 Avocado, diced
- 4 Green Onions, sliced
- 1 1/2 tbsp Za'atar
- Balsamic Glaze
- Balsamic Dressing:
- 3/4 cup Olive Oil
- 1/4 cup Balsamic Vinegar
- 2 tsp Agave Syrup
- 1 tsp Oregano
- Salt and Pepper
- Serve with your favorite grilled protein for a complete meal or on it's own a summer side!
Instructions
Preheat your grill or grill pan. If serving a protein with your salad, I start the protein before and let it rest while assembling the salad.
In a jar add olive oil, balsamic vinegar, agave syrup and oregano and shake. Season with salt and pepper. Set aside
In a mixing bowl, add arugula, torn basil, sliced green onion, and shallot. Toss with about 1/4 cup of dressing. Place in fridge to chill.
Time to grill your watermelon wedges. Once grill or grill pan is hot sear watermelon wedges placing it down and cooking for 2-3 minutes and flipping to cook for an additional 1-2 minutes. Once watermelon is grilled slice off the rind!
To assemble salad, place dressed arugula herb mix on plate. Add cubed feta, diced avocado, and grilled watermelon. Sprinkle with Za'atar and drizzle balsamic glaze on top. Serve by itself or with your favorite protein!
