You will feel like you are biting into food heaven when you try this Balsamic Roasted Strawberries and Burrata with Grilled Bread. Let me repeat: FOOD HEAVEN
If you’re like me, you’ve had your hay day with Burrata. I hate to say it but I was almost *almost* over it. I just was so sick of seeing it everywhere. But then, Inspo for this magical dish hit like a ton of bricks. Guys, Balsamic Roasted Strawberries with Burrata restored my love for all things burrata.
Now you may be skeptical about the Balsamic portion of the balsamic roasted strawberries, but don’t. It adds a brightness to the sweet strawberries and creamy burrata. I could literally eat this star on repeat all summer long, and you should too!
Use this pan for grilled bread!

Balsamic Roasted Strawberries and Burrata with Grilled Bread
Meet the official shared plate of summer. This Balsamic Roasted Strawberries and Burrata with Grilled Bread is seriously the best thing I've had in a while.
Ingredients
- 1 pound Strawberries, hulled and large pieces halved
- 2 tbsp Balsamic Vinegar
- 2 tbsp Brown Sugar
- 4-4oz Balls of Burrata, drained
- 1/4 cup, Pistachios, roasted, shelled, and crushed- See notes below on how to crush
- 2 tbsp, Mint, chopped
- 1/4 cup, Basil, chopped
- 16 oz, Bread, sliced
- Salt and Pepper
Instructions
Preheat oven to 400 degrees. Whisk together balsamic vinegar and brown sugar. In a casserole dish, add prepped strawberries. Pour vinegar sugar mixture over strawberries and toss to combine. Bake for 20 minutes.
While strawberries are roasting, I prepped all my herbs and nuts. When strawberries are roasted, remove and set aside. Using a grill pan or skillet grill bread to achieve grill marks. I brush with oil and sear for about a minute each side.
To assemble on a plate or bowl, add burrata and cut open to expose fresh mozzarella. Spoon roasted strawberries over top and all around. Top with chopped herbs and chopped nuts. Sprinkle with salt and pepper. Dig in!
Notes
To crush pistachios, I removed shell put them in a ziploc bag and use a meat pounder or rolling pin to gentle tap to crush
