Hi Friends and happy September! We are so close to cooler temps and the holiday season, ugh it’s just my fav! I also cannot believe my sweet baby girl is also going to make her appearance in just two short months. Such a weird and exciting feeling! Until then I’m going to be cooking up a storm to distract myself and this Apple Cinnamon Baked Oatmeal is the most delish distraction.
Baked Oats are one of my favorite meal prep breakfasts for a few reasons. This Apple Cinnamon Baked Oatmeal is a breeze to make, a healthy way to start your day, and sooo freaking good! Whip up a batch and you will have breakfast all week!

Apple Cinnamon Baked Oatmeal
This Apple Cinnamon Baked Oatmeal is sure be on repeat for the foreseeable future. Kick off fall with healthy oats, cozy spices, and apple!
Ingredients
- Baked Oats:
- 3 cup Oats
- 1.5 cup Almond Milk
- 6 Eggs, beaten
- 2/3 cup Maple Syrup
- 1 tsp Vanilla
- 1 tbsp Baking Powder
- 3/4 tsp Salt
- 1/2 tsp Nutmeg
- 1/2 tsp Ginger
- 1 tbsp Cinnamon
- 1/2 cup Chopped Pecan
- 1 Large or 2 Small Apples, Diced
- Spiced Yogurt Topping (optional):
- 1 cup Greek Yogurt
- 3 tbsp Honey
- 1 tsp Cinnamon
- Sautéed Apples (optional):
- 1 large Apple, Diced
- 1 tbsp Butter
- 2 tbsp Maple Syrup
- 1 tsp Cinnamon
Instructions
Baked oats:
Preheat oven to 350 degrees. Grease an 8 by 8 baking dish or something similar sized.
In a large bowl, add oats, baking powder, salt, nutmeg, ginger, and cinnamon. Whisk together. In another bowl, add almond milk, beaten eggs, maple syrup, and vanilla. Whisk together. Add wet ingredients to dry ingredients and mix together. Add in diced apple and pecan. Bake for 50 minutes or until center is set.
You can eat as is or if you are adding the optional toppings feel free to complete while baked oats are in the oven.
Spiced Yogurt Topping (optional):
In a bowl mix together yogurt, cinnamon, and honey. Set aside in fridge until ready to use.
Sautéed Apples (optional):
In a sauté pan melt butter on medium heat. Add in decide apple an cook while stirring for about 3-4 minutes until fragrant. Add in cinnamon and maple syrup and continue to cook while stirring until fragrant and apples are coated in syrup!
When Oats are done, remove from oven. Top with spiced yogurt and sautéed apples!
