Okay, okay I’m just going to be quick and sweet because that is EXACTLY what this Blueberry Homemade Poptart Recipe is. The idea of baking blueberry homemade poptarts popped into my head one day when I was feeling super nostalgic. I remembered those fun times from my childhood, munching on those awesome blueberry homemade poptarts. It felt like having desert for breakfast. So, I thought, “Hey, why not recreate these bad boys?!” And that’s exactly what I did!

To make things really easy, I used store bought pie dough. But nestled into sweet butter flaky pie crust is blueberry filling perfection. I personally doubled the blueberry jam recipe to have extra for who else knows what, the options are endless.

Blueberry Homemade Poptarts

Ingredients

  • 2 Store Bought Pie Doughs, defrosted and rolled out (you want to try to get it into a rectangle.
  • Egg Yolk
  • Splash of Milk
  • Salt
  • Blueberry Jam:
  • 2 cup Blueberries
  • 1/3 cup Brown Sugar
  • 1 tsp Cinnamon
  • 1 tsp Vanilla
  • 2 tsp Lime Juice
  • 2 tbsp Corn Starch
  • Pinch of salt
  • Blueberry Icing:
  • 1 cup powdered sugar
  • 2 tbsp prepared blueberry jam
  • 1 tbsp Milk of choice
  • Optional: sprinkles

Preheat oven to 350 degrees

Whisk together egg yolk, splash of milk, and pinch of salt. This is your egg wash.

To make the blueberry jam add jam ingredients into sauce pot and cook on medium heat for about 6-8 minutes until blueberries have start to burst and jam has begun to thicken. This is optional, but I blend it until it's slightly chunky with an immersion blender.

Cut pie doughs into equal rectangle strips (you are going to fold the dough on top of themselves to create the poptart) you want them to be about 6-8 in wide and cut the entire length up the pie dough so that you have equal strips. Move dough onto lined sheet pan. Using a fork poke holes into the top half of the rectangle strips in the raw dough.

Add blueberry fam onto the bottom half of the pie dough rectangle strips. Fold half of pie dough that has the hole poked into it on top of the filling. Brush egg yolk on poptart. Using a fork, crimp the edge of poptart all the way around. Pop it in the oven to bake for 20 minutes or until poptarts are golden.

While the poptart is baking whisk together Blueberry Icing ingredients. You want it to be drizzly, but thick enough to coat.

When poptarts are done allow to cool. Using a spoon drizzle blueberry icing on top and top with sprinkles.
