Say what you want, but these Sweet Potato Carne Asada Fries are a guilty pleasure with a healthy spin that NEED to be on your Fall punch list. Okay so, before we hop into the meat and potatoes of this dish, lol literally, I have some stuff to share. Clearly, it’s been crickets around here, but my family and made a BIG move. Our Southwest clan has now joined the Pacific North West and we are now residing in Portland. AND drumroll, as if that was not enough we are adding another member to our family in November. Needless to say, I’m tired. We are ALL tired. Anyways, Sweet Potato Carne Asada Fries are such good recipe for when we are homesick and want a little Southwest Flair.

Sweet Potato Fries

If you have ever had carne asada fries part of the allure of this delectable meal is fries. Fries are a food group in my humble opinion and I LOOOVEEE making homemade sweet potato fries in my air fryer. I’ve included step by step instructions below.

  1. Wash and Peel: Start by washing the sweet potatoes thoroughly under cold water to remove any dirt. Peel the sweet potatoes using a vegetable peeler. If you prefer, you can leave the skin on for added texture and nutrients.
  2. Trim Ends: Cut off both ends of each sweet potato to create flat surfaces, which makes the cutting process safer and more stable.
  3. Cut into Planks: Slice the sweet potato into planks about 1/4 to 1/2 inch thick. The thickness of the planks will determine the thickness of your fries.
  4. Cut into Fries: Stack a few planks at a time and cut them into sticks of the desired width. Aim for uniform sizes to ensure even cooking. For classic fries, aim for about 1/4 to 1/2 inch wide sticks.
  5. Season and Cook: Toss the cut sweet potatoes with a bit of oil and your favorite seasonings. Spread them out in a single layer on a baking sheet for baking, or use a frying pan or air fryer for other cooking methods. Bake at around 425°F (220°C) for 20-30 minutes, flipping halfway through, or cook according to your preferred method until they are crispy and golden brown. I achieved this in my air fryer.

To make the best carne asada for these Sweet Potato Carne Asada Fries, you are going to want to get either a flank steak or skirt steak. Mix together citrus, garlic, a splash of soy, some herbs, and spices. Then you are going to marinate for ideally 24 hours, but minimally 4 hours if you’re in a crunch. Sear that bad boy, and chop it up. Once your fries are done and your meat is marinated, seared, and chopped you pretty much assemble all your toppings and you are on your way to zesty appetizer heaven.

Just in time for Football season these Sweet Potato Carne Asada Fries are here to serve. A great appetizer or for us a snacky family meal this will be a shared plate in your family rotation.

Ingredients

  • 2- Medium sized Sweet Potatoes, cut into fry sized match sticks (detailed instructions in the blog post if guidance is needed)
  • 2 tbsp Olive Oil
  • 3/4 lb of Skirt Steak or Flank Steak
  • 1/3 cup Shredded Mexican Blend Cheese
  • Pickled Jalapenos
  • Guacamole
  • Pico De Gallo
  • Sour Cream or Greek Yogurt
  • Cilantro
  • Salt and Pepper
  • Lime
  • Marinade for the Steak-
  • 1 Orange, Juice
  • 1/2 Lemon, Juice
  • 1 Lime, Juice
  • 1 Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 2 tbsp Soy Sauce
  • 1 tsp Oregano
  • 1 tbsp Oil
  • 1/4 cup Cilantro, chopped

Instructions

Mix marinade ingredients together in a bowl. Marinade steak for 4 up to 24 hours

Preheat airfryer or oven to 425 degrees

Prep sweet potato fries. Cut fries into matchsticks. Toss in oil, salt, and pepper. Airfry for 25 minute until cooked through and crispy. If you need detailed instructions refer to above blog post.

Sear steak on both sides for 2-4 minutes. Remove and let rest. Dice up into bite-sized cubes

When fries are done, it's time to assemble. Keep air fryer on and hot. Top sweet potato fries with cheese, pickled jalapenos, and more cheese. Pop back into airfryer until cheese is melted.

Remove and add sour cream or greek yogurt and guacamole. Finish with chopped cilantro and a sprtiz of lime juice.
