Woah! Step away from the trash can with your crusty leftover loaf of artisan bread. It still has life to live. And that life? Bacon, Cheese, and Spinach Strata. Okay?
I did it, I went to the farmer’s market and bought the most glorious loaf of bread from a bakery called Noble Bread. They are local here in Phoenix, so if you’re in the area, check them out! It was 7 grains and all seven of those grains were amazing. The only downside to picking up a whole loaf is, how the heck am I gonna eat a whole loaf before it goes stale. Well it staled on me. But I was quickly reminded that I went to culinary school, and for that reason I know how to make some sad food whole and happy again. Ta da: I introduce to you, this beauty of a Bacon, Cheese, and Spinach Strata.
And, Shocker!!! Like almost all of meals, this Bacon, Cheese, and Spinach Strata is totally meal prep happy. I may or may not have eaten it the next day, cold, and I don’t tell lies, it was like leftover cold pizza’s cool older sister. (layman’s terms: It was AMAZING!)
Now, I know at this point I basically sound like a Bacon, Cheese, and Spinach Strata infomercial, but all the ingredients are interchangeable. That’s right girl/boyfriend, sub out that bacon for ground turkey. I won’t be mad. Not one bit.
So the moral of the story here: Buy your loaf of bread, make your bruschetta, seize your day, and don’t feel bad about wasting it. Cuz, well, you didn’t.

Bacon, Cheese, and Spinach Strata
Ingredients
- 3.5-4 cup Bread, cubed (medium bite sized)
- 1.5 cup Milk
- 6 Eggs, beaten
- 10 Slices of Bacon, Cooked & Choped
- 1 cup, Spinach, Chopped
- 1.5 cup, Gruyere Cheese, grated
- 1.5 tsp Dijon Mustard
- 1 tsp, Smoked Paprika
- 1-2 Tbsp Salt
- 1 tsp Pepper
- Olive Oil
- Salt
Instructions
Preheat oven to 350 degrees
Oil your baking dish with olive oil to prevent sticking
Place cubed bread in baking dish
Once the oven has preheated, put cubed bread in oven and back until bread starts to turn golden (about 7-10 minutes)
Remove from oven and allow to cool
While cooling, add eggs, dijon mustard, paprika, salt, pepper to mixing bowl and whisk together
Pour milk into mixing bowl and mix
Once bread has cooled, add bacon, spinach and cheese in with cubed bread into the baking dish
Pour milk and egg mixture over bread and allow to soak, you may need to press the bread down
This can soak overnight if needed, but at a minimum of 30 minutes
If you are soaking overnight, be sure to turn your oven off, when you're ready to cook preheat oven to 350
Bake for 35 minutes and then begin to check
I like to check every 10 minutes after
Once the liquid is solidified, it is done!
