Seriously. Cheese, Chicken, Broccoli, and More Cheese.
I hope everyone’s holiday season has been treating them amazing! I know mine has! So far, we’ve had our annual baking day with all the ladies in my family, which is probably one of my favorite holiday activities to partake in. And then, I just really appreciate all the extra time with family members, the no-shame binging of Christmas music, and obviously the food.

Seriously, when it comes to Christmas Eve dinner, I do not mess around.
Typically our spread consists of some kind of delicious pasta. Last year, it was an amazing Lobster Mac n Cheese that will go down in the books. This year, it is going to be Creamy Chicken Lasagna Roll Ups. And you know what? They are the best thing you didn’t know you were missing in your life. And unlike traditional lasagna, Creamy Chicken Lasagna Roll Ups are super easy to portion out. No cutting required!
Stuffed inside of these little rolls of goodness, I used a ground spicy Italian chicken. This was then mixed with ricotta and cut up broccoli florets. To top it all off, these Creamy Chicken Lasagna Roll Ups were smothered in a creamy cheese sauce and baked to perfection.
Now as you would expect from any dish related to Lasagna, it wasn’t the prettiest. But looks can be deceiving and were forgiven after taking one bite of this flavor explosion.
Did you ever wonder why when you were younger the easiest way to eat your broccoli was smothered in cheese?
Exactly, I didn’t either. The point is your kids are going to love these Lasagna roll ups just as much as you… AND you are sneaking in veggies. So really it is a win-win.
Now I know some of you might be thinking, rolled lasagna has got to be a hard thing to do! And guess what, it is so easy! I included some pictures to show the process. And the process is actually kind of fun.
So basically, whip this Creamy Chicken Lasagna Roll Ups next week for your Christmas Eve Dinner and it is sure to be a favorite!
Creamy Chicken Lasagna Roll Ups
Ingredients
- Cheese Sauce:
- 1 Onion, chopped
- 2 cloves of Garlic, minced
- ½ cup Butter
- ½ cup Flour
- 2 cup Milk
- 1 ½ cup Chicken Stock
- ¼ tsp Ground Nutmeg
- 1 tsp Dried Basil
- 1 tsp Dried Oregano
- Lemon Juice
- 1 ½ cup Shredded Mozz Cheese
- 1 cup Shredded Mozz Cheese
- 1/3 cup Shredded Parmesan Cheese
- Salt and Pepper
- Filling:
- 1 lb Spicy Italian Ground Chicken, cooked
- 16 oz Ricotta Cheese
- 1 ½ cup Frozen Broccoli Florets, thawed and chopped into pinky size or smaller
- 1 Egg
- Salt and Pepper, to taste
- Noodles:
- 10-12 Lasagna Noodles
- Water
- 1/4 cup Whole Wheat Bread Crumbs
- 1/2 cup Parsley, chopped
Instructions
Filling:
In a mixing bowl add cooked ground chicken, chopped broccoli, ricotta, egg, salt and pepper
Using a spatula stir to mix until combined
Set aside in fridge
Cheese Sauce:
In pan add butter and melt
Once melted add onions and garlic
Allow to become fragrant and translucent
Add flour and stir to combine
Add Lemon Juice
Add milk and chicken stock
Whisk to mix together
Add oregano, nutmeg, and basil
Allow to come to a boil
Once it is boiling reduce heat to a simmer
Sauce will begin to thicken
Add Mozzarella and Parmesan, stir until all cheese is melted in and it is thick
Cover and keep on lowest setting of heat or off.
Noodles:
Bring large pot of salted water to boil
Once boiling, add lasagna
Cook lasagna noodles in salted water for 8-11 minutes, until al dente
Pour through strainer and rinse with cool water
Preheat oven to 375 degrees
Lie lasagna noodles on flat surface, I used baking sheets
Using a spoon, scoop and spread filling on top of noodles
Roll them up
Repeat until you have used up all the filling and the noodles
In a oven safe baking dish, pour 1/2 cheese sauce on the bottom of the pan
Place rolled lasagna in the pan, pour remaining cheese sauce over noodles
Sprinkle with 1 cup of mozzarella cheese
Sprinkle with bread crumbs
Bake for 20 minutes or until golden on top
Sprinkle with chopped parsley
