Hi Guys! This Easy Chicken Curry & Vegetable Skillet kind of just.. happened. Sometimes this can be dangerous, but in this case the result was pretty dang good. I recently purchased a spiralizer and let me tell you, it is my newest obsession. I am sure you have heard all about zucchini noodles, but you can spiralize pretty much anything. Cucumbers, sweet potatoes, summer squash, let your imagination work it’s magic.

Recently, I started paying attention to macronutrients. I know, a little bit late to the party. But, I was shocked at how easily I went wayyyy over my carb intake. Consequently, “zoodles” have been my muse this week. “Zoodles” are definitely not noodles, but they are delicious nonetheless.  Especially in conjunction with this easy chicken curry and vegetable skillet. Zoodles are also a great way to add some layers of texture to any meal.

Curry is such a unique earthy flavor. It is a good way to add some variety  to your weekly menu and it is super easy to make. Anyways, curry powder is a blend of spices originating from South Asia. Generally, consisting of turmeric, ginger, garlic, cumin, and a few other variations. You can usually purchase a blend at the store in the form of “curry powder”, but I usually just make my own. The curry powder blends into the coconut milk, making such a glorious sauce for this easy chicken curry dish. You can put it over chicken, chick peas, veggies, or even ground turkey. I personally love it paired with my favorite coconut rice!

If you pay attention to other health blogs or even peeking around pinterest looking for recipes, chances are you’ve seen Turmeric. It is a spice that originates from South Asia. Turmeric has many healing properties. For example, it is great for reducing inflammation, acts as a natural anti-depressant, and is great for managing arthritis. Turmeric is one of the main ingredients in curry powder. That means This easy chicken curry & vegetable  skillet is packed with turmeric!

Easy Chicken Curry & Vegetable Skillet

Serves: 4-6
Cooking Time: 30 Min

Ingredients

  • 2 tbsp Curry Powder
  • 1 tbsp Tomato Paste
  • 1 -2 oz Can Coconut Milk
  • 1/2 Small White Onion, small diced
  • 3, Small Garlic Cloves, Minced
  • 1 tbsp, Ginger, Minced
  • 1 Red Bell Pepper, Chopped
  • 2 Medium Zucchini, Spiralized
  • 2 cups, Chicken, cut into medium cubes
  • 1 cup, Red Cabbage, thinly sliced
  • 1/4 cup, Cilantro, chopped
  • 1-2 tbsp, Grapeseed Oil
  • Juice from 1 lime
  • Salt and Pepper, to taste
  • Optional: Jalepeno/Red pepper flakes

Instructions

In large skillet, heat oil

Add garlic, onion, bell pepper, and ginger

Allow to become aromatic and translucent

Add Tomato paste and stir to coat veggies

Add curry powder, stir to coat veggies in spice

If you would like to chili flakes do so here

Add coconut milk and chicken

Allow to simmer, while chicken is cooking sauce will start to thicken

Once chicken is done add zucchini noodles and stir

Let cook for about 1-2 minutes until zucchini noodles have softened but have a little crunch to them

Add desired amount of salt and pepper and lime juice

Top with red cabbage and Cilantro
