First things First…..
Between moving, my new job, and getting settled back with life, (ya da ya da ya da) I am so so sorry that it has been a little hit or miss. And by hit or miss, I mean more miss. But I think life is settling down. Which means…. I get to start incorporating some of my new goals for 2018. Better late than never I suppose.

Life just got better with these Easy Falafel Patties!
Okay, I am so guilty of not eating meat and am constantly reminded by my boyfriend. But honestly, just look at that photo. Don’t get me wrong, I love a good steak cooked medium rare. But veggies are where my heart is. And man oh man, have I had a falafel craving as of late. It was late one night, I was dreaming and in my dream I had the most glorious Falafel Pita (weird, I know), and since I could not shake it. So ta da!!! Que in the Easy Falafel Pattie recipe.
With a name like Easy Falafel Patties, I bet you are wondering how easy they could be.
With the most time intensive part being the soaking process, you should not have a lot to worry about. And if your thinking about skipping the soaking part, you can, but your results will be infinitely better if you bite the bullet and use real dried chickpeas. To start, I soaked my chickpeas overnight. For these easy falafel patties you want the chick peas to be completely dry I do this typically by laying out my chickpeas over some paper towels.
Once you have everything in a food processor and processed, the best way that I found to shape these Easy Falafel Patties is to scoop them with a cookie scooper and flatten by hand.
The most awesome part about these little nuggets of non-meat goodness is that they are baked and not fried, making them a healthier option than most falafel. So you’re welcome. And get on it!

Easy Falafel Patties
Ingredients
- 1 Cup of Overnight Soaked Chickpeas (1 Cup Dry Chickpeas to 4 Cups Water)
- 1/2 Medium Red Onion, chopped
- 1 Cup Parsley
- 3 Garlic Cloves
- 2 tsp Lemon Juice
- 1 tbsp Cumin
- 1 tsp Red Pepper Flakes
- 2 tsp Dried Oregano
- 1 tsp Baking Powder
- 1 1/2 tbsp Salt
- 1 tsp White Pepper
- 3 tbsp Olive Oil

Instructions
Pre-heat oven to 370 degree
Be sure to dry off chickpeas after soaking, see picture in blog post for an easy way to accomplish this
In food processor, add chickpeas, red onion, parsley, garlic, lemon juice, cumin, red pepper flakes, oregano, baking powder, salt, and white pepper
Grind until chopped together. Be sure not to over process and turn into a paste
Using a two oz cookie scoop, scoop and form falafel into patties
Continue until you have used up the mixutre
Over each patty, pour a little bit of olive oil
Flip and repeat on opposite side
Place in oven and bake for 10 minutes
Remove from heat and flip
Cook for another 10 minutes
After they are done, remove from oven
